Pinoy Macaroni Salad

To make my Pinoy Macaroni Salad, Non Sweet Version I did not use any sweet condiments that we Pinoy always throw in to the usual Sweet Macaroni Salad like Condensed Milk, Fruit Cocktails, Sweet Creams, Lots of Raisins and including sweet fresh and dried fruits. The only binder that I used was real mayonnaise. The only sweet ingredient that I added were sweet pickled relish and finely diced pineapple, just enough to kick in some hint of sweetness.

This recipe is for one (1) kilo pasta, adjust the quantity of the ingredients if you find the quantity too much for the family.

Ingredients:

Pinoy Macaroni Salad, Non Sweet Version - Ingredients

1 kilo elbow or curls macaroni, cooked as per package instructions
2 470ml bottle Lady’s Choice mayonnaise
250 grams chicken breast, boiled, shredded
1/2 cup diced bacon, fried
1 cup cooked, diced sweet ham
4 hardboiled egg, finely diced
2 medium sized red onion, peeled, finely diced
1 big size carrot, skinned, finely diced
3 stalks celery, diced into small pieces
1 cup pineapple chunks, finely diced
1 cup sweet picked relish

Method:

Combine and mix thoroughly all the ingredients in a big bowl. Chill in a refrigerator until ready to serve.
