Dampa sa Macapagal Blvd.
Dampa sa Macapagal Blvd. is one of the newer Dampa place in Metro Manila. It is located at the reclaimed land at Pasay city near Mall of Asia and near the vicinity of the World Trade Center and PNB Financial Center, just across Macapagal Blvd.To Pinoy the Dampa-Paluto is a seafood dining concept where you have to buy the seafoods and other ingredients in a wet market and have it cooked, paluto by any of the restaurants (of your choice) that are located adjacent or around the wet market. The seafoods that are sold here are of premium quality compared to a regular wet market. The restaurants charge certain percentage for their service for cooking the food based on the actual cost of the ingredients. The Dampa sa Macapagal is more popular compared to the other Dampa including the original Dampa sa Paranque because of its ideal location which is near the Manila Bay, with ample parking space and cleaner surrounding. The place in fact is a perfect place to bring your balikbayan relatives or foreign friends or visitors for a treat of Filipino food. During my last trip home to Manila together with my family we had a change to visit the place and had a great seafood lunch. Here are some of the snap shots of that lunch at Dampa sa Macapagal.

Adobo sa Asin, Adobong Baboy sa Asin Recipe . This is my second version of this adobo dish . The first was simply called adobong puti . Cooking procedure of both are similar, on the first dish it was a mixture of chicken and pork. Both versions are cooked adobo with out soy sauce. I have to post this request in response to some readers query on how to cook adobo sa asi n. This is best served a day after with chopped tomato and onion with fish sauce and a lot of rice. Ingredients: 1/2 kilo pork belly, pork rasher, cut into serving pieces 1/2 cup white vinegar 1 head garlic, crushed 1 tsp. pepper corns 3-5 pieces bay leaf 3/4 tsp salt Cooking procedure: In a sauce pan place pork, pour 2 cups of water. Add in vinegar, garlic, peppercorns and bay leaf and salt bring to a boil and simmer at medium to low heat for 20 to 30 minutes add more water if required. Jumping Salad, Fresh Water Shrimp Salad . Live shrimp are eaten alive and literally still jumping with only a dip or drizzled with kalamansi and salt to taste. This kinilaw version of shrimp is very popular in Ilocandia and some other part in the Philippines. The small live fresh water shrimps are eaten live including the shell and some eat also the heads. There are no exact quantities for this recipe, ingredients deepens on ones preference. Ingredients: live fresh water shrimp kalamansi juice tomato, chopped (optional) onion, chopped (optional) ginger, cut into thin strips (optional) salt Method: Wash fresh water shrimp and drain. Put fresh water shrimp in a deep bowl. Toss in all other ingredients in the bowl. Quantity of as per ones taste and preference. cove bowl to prevent shrimp from jumping all over the place.
