Buridibud Ilocano Vegetable Recipe Buridibud Ilocano Vegetable Recipe, made up of Upo, Malungay and Kamote Roots Buridibud is a variation of dinengdeng, it is simply boiled with bagoong na isda and best topped with grilled or fried fish. Buridibud is usually cooked with a choice of vegetable, like upo, malungay and other leafy vegetables or any other similar type of vegetables or in combination, and diced kamote roots, which give sweetness and add texture on the broth.  Ingredients: 1 medium size upo (tabungaw), sliced into thin wedges 1 big bowl malungay leaves 2 medium size kamote roots, diced 3 medium size tomato, chopped 2 medium size onions, sliced 2-3 green long chillies 1/4 cup boneless bagoong na isda, diluted in 1/2 cup water grilled or fried fish, sliced crosswise salt

Originally it was posted on Overseas Pinoy Cooking Vigan Royal Bibingka Recipe -   posted on December 2008 Special Vigan Royal Bibingka - again posted on December 2010 And on Apr 28, 2011 a slide presentation was posted on YouTube by UT-Man. The recipe has attracted a lot of positive comments and specifically on our website. Our YouTube Video how ever have mixed reactions, viewers were looking for actual cooking video of our Vigan Royal Bibingka. During those times we are unable to make cooking videos for the reasons that my type of work did not allow time do cooking videos. Now I hope you like the video.

Vigan Poqui-Poqui and Garlic Fried Rice Breakfast Poqui-Poqui, that what we call this Ilocano stir-fried grilled eggplant with egg. I am certain that dish originated in Vigan. Some Ilocano lads out there for sure will object, trust me I am from Vigan. Whatever the origins of   Poqui-Poqui it is one of the regular   breakfast dish of the Ilocanos, from Vigan or otherwise. Vigan Poqui-Poqui and Garlic Fried Rice Breakfast Cooking Method-Recipe Vigan Poqui-Poqui Flame grill 2 medium size eggplants. Grill eggplants until soft and fluffy. Remove charred eggplant skins under running water then rinse. Skin 2 onions then chop or dice. Chop or dice 2 medium size tomatoes. Slice open the grilled eggplants, then cut crosswise. In a small frying pan, heat about 4 to 4 tablespoons cooking oil. Stir in the chopped onions, tomatoes and grilled eggplants. Add in about 1/2 teaspoon of salt and continue to stirfry. Vigan Miki Soup, plus Red Soup. The Vigan Miki similar to other pasta and noodles, are best serve immediately. Otherwise the broth will be absorbed by the pasta or noodles, if serve at a later time. This is very true if the pasta or noodles used are dried type. The rehydration process does not stop when cooking is finished, it will continue absorbing the broth until all of the liquid is absorbed. Not unless the pasta or noodles used are fresh then, the absorption would be very minimal. When you’re in Vigan and trying to find a cafe along Calle Crisologo for break and sit down for a hot coffee or cold refreshing drink then the best place is Coffee Break Vigan . It is conveniently located just halfway along Calle Crisologo at Salcedo Street intersection on the right side if you are coming from St Paul Cathedral . Coffee Break Vigan has a wide range of hot beverages to choose from, from my personal favorite, cappuccino to Hazel Nut Flavored coffee , another favorite. Vigan Pipian . With the recent trip to Vigan I manage to bring back home a bunch of pasotes for my long overdue Vigan Pipian recipe . To educate our readers who are not from Vigan or not Ilocano and never heard of this delicious dish here are some brief description as per my personal knowledge. Pipian is not similar to Kare Kare except perhaps the color . The three essential ingredients that may not be in your regular kitchen are pasotes a herb that gives that strong flavour, kamias which of course gives a sour tasting thick soup and toasted ground rice , grind coarsely to give a porridge texture. Pipian is serve as merienda but may be serve as a vian. Beef and pork parts, chicken or a combination may be used. Frankly I am not really sure if it originated in Vigan . Revisiting Vigan's Nostalgia and Cuisine, Day 1 . My regular visit to Vigan whenever I am on my home leave from overseas includes visiting relatives and rediscovering my childhood home’s splendour and cuisine. Going home to Vigan always rekindle old childhood memories and a time to satisfy cravings for authentic Ilocano food that are part of my childhood. My last visit was very tight which was timed on the weekend so that the whole family can come. We left Manila in the late hours of Friday night and back by Sunday night. The night trips to and from Vigan have reduced the travel time to about six to seven hours against the 12 to 14 hours on a day trip. The itinerary of places to visit were limited to places around Vigan and the adjacent town of Bantay .
