Tokwa at Baboy with Bagoong Alamang Bicol Express Style Pork and Tofu Cooked with  Bagoong Alamang Bicol Express Style. Ingredients: 1 kilo pork belly, cut into small cubes 1 big block hard tofu, sliced, pride, cut into squares 2 cups fresh bagoong alamang, very quickly rinsed 2 small packs Coco Mama coconut cream 3-4 medium size tomatoes, chopped 2-3 small native red bell pepper, sliced 2-3 medium size onions, chopped 1/2 head garlic, chopped 1/2 cup vinegar 2 tbsp. wash sugar 1 tbsp. cracked black peppercorns 2-3 small bay leaves red hot chilies, chopped green long chilies, chopped fish sauce to taste salt to taste cooking oil

Bicol Express an authentic Bicolano dish? Or a dish named after a train that travel to Bicol . Whatever it is, this dish is one of the more popular Pinoy dish , and it has evolved in many form. Bicol Express is one of the mainstay viand in most carinderia turo-turo stalls to a highly recommended dish on a fine dining Filipino restaurant . We have posted several version of Bicol express in the past, click on the link below to check them out. Making Bicol express is fairly easy, our version do not require any complicated cooking steps. Just mix in all the ingredient, in 2 batches the meat ingredients then the vegetables ingredients, and let cook till the liquid has turned to an oily sauce, you will never go wrong. The amount of green chili is optional, you may use as many as hoy you can tolerate the hotness. Special Bicol Express. Why special? First of all I tweaked my usual Bicol Express recipe to incorporate ingredients that were used on countless Bicol Express dishes   that I had, that were cooked by friends, served at parties and restaurants. Special Bicol Express it is, I could not think of any more appropriate and relevant name for this recipe. Below are the tweaks that I have done or add. Chopped Tomatoes - I do not use tomatoes , but I have had Bicol Express cooked with tomatoes from Bicolano colleagues and it was good the sourness of the tomatoes complements with the super spiciness of their Bicol Express . Lemongrass - I did use tanglad a couple of times only, using lemongrass to a dish with bagoong alamang make sense. Lemongrass removes the fishiness of the Bicol Express. Creamy Bicol Express with Green Beans . There are countless versions of Bicol Express out there, I also do have one recipe in the archives that uses jalapeno chilies. Today I would like to share how I made this Creamy Bicol Express , yes I added some green beans for a reason. Originally I intended to cook this dish using a lot of Australian long green and /or red chili, I always thought that the long chili varieties here are spicy mild. The Australian long green and red chilies are spicy mild alright, but if used in large quantities the hotness is compounded and it would be intolerable to most or average Pinoy. I wanted my Bicol Express with lots of greens so instead of using a lot of chilies which would make the dish super spicy, I opted to use green beans for a milder dish. In fact the best Filipino vegetable dishes are usually those vegetables cooked with coconut milk . One such Pinoy vegetable cooked in coconut milk is Gising Gising . Gising Gising, Spicy Green Beans with Coconut Milk . Gising gising is one of the more popular vegetable ginataan dish in most Filipino restaurants . I have no idea where the dish originated and I would not assume also that it came from Bicol or Pampanga . The name gising-gising literely translates to wakeup-wakeup, it has been told that because gising gising is spicy hot it awakens your senses. Gising gising has become popular to most Pinoy who loves spicy ginataang dishes . There are several versions of the dish which are based on type of vegetables used. Asparagus with Coconut Milk, Pinoy Gising Gising Style . It has been some time since I last posted an innovative dish , today I would like to share one that you will sure be interested to try. Gising gising is a popular Pinoy spicy vegetable cooked in coconut milk dish. There are countless versions out there made up of Baguio beans , string beans , winged beans even kangkong or any similar vegetables. gising gising supposed to be a spicy dish that wake you up which is literary translated. For today’s entry I used  asparagus  for my  gising gising , I know it may be not appropriate because of the cost reason, at times  asparagus  are pricey especially at  Metro Manila Supermarkets. Bicol Express, Gulay na Lada . Here is a fiery dish associated with the Bicolanos as the name connotes. It is widely acknowledged that Bicol express was invented in Manila, what’s in a name, it is a fact that these dish is similar to gulay na lada which is a popular native Bicolano dish. To tune down the fieriness of the original dish I have used mixed jalapeno chilies and siling haba, again you could always use your own ratio or if you can handle really hot use only siling haba . For an added zest I added a couple of pinches of turmeric this will also give little color to the whitish original dish.
