I have some original Cebu Chorizo intended for breakfast together with corned beef and some sliced ham. Then I though why not mate today’s breakfast special? Cebu chorizo which is sweet, the canned chunky corned beef and the sliced ham can be an alternative to a ground meat and hotdog sweet spaghetti sauce. Should you have some left over pineapple fiesta ham last Christmas and looking for a dish for the coming New Year’s celebrations , here is a spaghetti recipe to recycle those left over ham for New Year’s Media Noche . One of our non-Filipino Facebook friends has commented our version, the Pinoy version of spaghetti taste like candy. The Pinoy spaghetti really do taste like candy, it is sweet with little sourness and hotness. Charlie Chan Chicken Pasta? Pinoy Style . A lot of friends are asking for a better recipe of Yellow Cab Pizza’s Charlie Chan Chicken Pasta . To be honest I am not really a fan of the  Charlie Chan Chicken Pasta but because of the insistent request by friends, and for some reasons this pasta dish has hit most Pinoy . Also at one time Charlie Chan Chicken Pasta it is included in the dish served some of the party that you have attended. During these last several days I revisited our local Yellow Cab Pizza restaurant and tried to dissect the pasta dish. Asparagus and Mushroom Spaghetti in White Sauce is a vegetarian spaghetti in white sauce that is not only yummy but nutritious as well. I am fascinated by the abundance of mushrooms in the fresh vegetable section at Woolworths Supermarket. The sight of those fresh button mushrooms that occupy a large section of the vegetable racks always make me think of what dish I could make out of them. Today I decided to make a spaghetti dish in white sauce with assorted mushrooms. I wanted a variety on the type of fresh mushrooms so I used button, oyster and shitake mushrooms. To liven up the colours and flavours I added grilled bell pepper and asparagus. For the white sauce I just used sour cream and some white wine. Although the classic Pinoy spaghetti is loved by most Pinoy specially the children, more and more Pinoys are beginning to love other types of spaghetti dishes. Spaghetti with pesto sauce is one of the usual choice, and the more popular one is the pesto spaghetti with grilled chicken. Spaghetti with grilled chicken is served at almost all of the popular spaghetti and pasta restaurants. For some reasons, probably health reason(?), most of the grilled chicken topping used by these restaurants are grilled chicken breast which most of the time grilled to almost dry and tasteless. I love pasta with sea foods, I would prefer spaghetti with seafood over the regular spaghetti with meat sauce when ever I get the change to eat in a pasta restaurant. As a manifest, I have already posted several spaghetti with seafood, like the classic spaghetti marinara , a tuna carbonara , spaghetti with clams and the novel spaghetti with sardines . Today I would like to share my version of white sauced seafood spaghetti. I used evaporated milk and all purpose cream as the base of the white sauce. It is flavored with the broth from boiling the clams. The white wine can be omitted, use a good quality cooking oil if butter or olive oil is not available. Spaghetti with Fried Sardines in Hot and Spicy Sauce is a product from all those extra fried tawilis sardines in hot and spicy sauce from my last post . This one is straight forward all was needed was about cup of the fried sardines poured over a platter of cooked spaghetti noodles and topped with grated cheese. It was simply great the fried tawilis sardines sauce was just right, sweet sour, hot and spicy. The idea started when I first tasted a can of Master fried sardine in hot and spicy sauce, it was how my recipe for the fried tawilis sardine was created. Should you like to try this spaghetti version there is no need to cook the sardines yourself, just open a can of Master fried sardine, enjoy.. Tuna Carbonara . The Pinoy carbonara has evolved into a sweet and creamy white sauced spaghetti dish. This probably because of our Pinoy sweet spaghetti which have come to love by our kids and most of Pinoy. Out of curiosity I did tried the carbonara served on most fastfood courts on several occasions. These versions are creamy sweet, they use a lot of sugar and commercially sold cream. Not unless you eat at authentic pasta or spaghetti restaurant you are missing the true taste of the real carbonara. Carbonara is normally topped with bacon tidbits, garnished with mixed Italian herbs (marjoram, basil, rosemary, oregano, parsley, thyme, ect.) For the sauce beaten egg is mixed in the pasta right after turning the heat off. Here is my version using canned tuna chunks instead of the usual bacon. Spaghetti Marinara . I love spaghetti marinara. In fact I like it more than the sweet Pinoy spaghetti. When ever we eat out on a spaghetti specialty restaurant I would always take spaghetti marinara. This probably because of my love for seafood in general. Now I am sharing my recipe which is fairly simple. Spaghetti marinara uses herbs that are not regularly used in Pinoy cooking like fresh parsley, basil, oregano ect. As an alternative I used McCormick Italian seasoning which is made up of dried herbs. Cooking is basically the same as to my previous post of Pinoy spaghetti and Pinoy spaghetti longanisa . Here is how I cooked it. Pinoy Spaghetti Longganissa . In the tradition of spaghetti with meat balls , I am offering a Pinoy version using our own longganisa sausage . The idea came upon in my thoughts from a similar post by Pinoy Cook several months back. The recipe calls for a garlicky style of skinless longganisa . Lukban or Vigan longganisa are the recommended choice. I would have though the skinless type is the logical choice, they have the extra binding ingredients and when cut in right sizes it will form into nice longganisa balls. I didn’t want to deviate from the Pinoy spaghetti version though, after all the site is all about Pinoy cooking . Pinoy Spaghetti , have you wondered why our spaghetti is totally different with the Italian spaghetti or any other spaghetti. It is sweet and with a tinge of spiciness. It has something to do with our love of sweet foods, especially with food cooked in tomato sauce. Pinoy spaghetti has come to be love by our kids. And of course every kids birthday celebration there will always be the sweet Pinoy spaghetti. Here is my version.
