FISH ESCABECHE with Yellow Sweet and Sour Turmeric Sauce │ Escabecheng Isda, Alumahan Escabecheng Isda with Yellow Sweet and Sour Turmeric Sauce. Try this Dilaw na Escabecheng Isdang Alumahan, pwede rin Tilapia, Galunggong or kahit na anong malaman na isda. Instead of using soy sauce for color I used turmeric powder. I also used refined white sugar instead of brown sugar, to keep the color light yellow. The vibrant light yellow color sauce has turned the dull and boring dark brown color of the usual Pinoy Escabeche. Another important note is the use of less quantity of the sauce vegetable ingredients. Often times we overload the sauce with vegetable ingredients, to the extent that fried fish is submerge with the vegetables which result unappealing escabeche dish. SLOW COOKED LUTONG BAHAY BAGOONG ALAMANG This is a my home cooked or lutong bahay version of Bagoon Alamang Recipe. The ingredients are very basic, a lot of oil and a lot of crushed garlic, lemongrass, some washed sugar and some white vinegar and of course crispy fried pork. It is slow cook or fried in oil for about 40 to 45 minutes at very very low heat, the lowest setting that is possible on your stove. The pork cut in small cubes are first fried till crispy, add the wash and rinsed bagoong for slow frying. Washing the uncooked bagoong alamang will the excess salts and remove most of the pungent smell. Cooking oil is added portion at a time, this will maintain and regulate the cooking oil temperature at the least temperature. The chopped garlic are added at the final stage of cooking, adding the garlic later will avoid burning it, burn garlic are bitter. Plate Grilled Chicken Tocino │ EASY HOMADE CHICKEN TOCINO RECIPE Paano Gumawa ng Chicken Tocino (Tosino), No Pineapple Juice Recipe. Subukan itong naiibang Easy Homemade  Chicken Tocino  recipe. Used deboned Chicken Leg Quarters. I deboned the chicken legs, the exposed meat will easily absorbed the curing mixture. The deboned chicken will cook faster, I used plate grill and pan grill instead of charcoal grill. I made it simple, just throw in all together the curing mixture or ingredients to the chicken. Because of that, the chicken with the curing ingredients has to be massage a little longer, and cured for several days, for the meat to absorb the curing mixture. Massage, do not squeeze, for about or a total of 8 to 10 minutes, or until most of the liquid is absolved by the meat. It is important that the chicken should be chilled when mixing with the curing ingredient. Refrigerate, place in a chiller, to cure for 2 to 3 days, at this period the meat will absorbed all the curing mixture
