Bopis with Liver Spread and Pineapple Bopis is one of the popular karinderia “ulam”. Bopis is made up of pig lungs, hearth, and spleen including the attachment arteries and air pipes or trachea.and are sold in as sets. It takes some cooking skills to cook bopis.  For me a good bopis should have first of all, that pig lung after odor and after taste “lansa” is very minimal after all it is one of the inherent attributes of the dish that is why it is bopis.  Second it should be appealing at the very least, I want to see the diced parts, that way you will enjoy chewing every little cube of the pig lungs and hearth.  The vegetables should still be crisp, not over-cooked and lumpy. It should be cooked dry, not soupy. The chilies should be there for moderate hotness, not super spicy to hide the pungent pig lung odor and after taste , that was not cooked properly. Pinaniki, Ginataang Bopis ng Laguna .   If you are not from Laguna you may not know that there is a ginataang version of bopis . In Laguna they call it Pinaniki , do not ask me why or what is in the name, I hope our readers from Laguna or those who have first-hand knowledge of the Pinaniki, Ginataang Bopis ng Laguna can share more information about it. My version of Pinaniki, Ginataang Bopis ng Laguna was cooked similar to the cooking procedure of my other Bopis recipes , click the link list below to check them out. Bopis is known as karinderia or turo-turo dish. It is cheap, but it requires a lot of work to prepare and cook. Personally Bopis is one of my favourite dish, I would most likely have it when I eat at karinderia or canteen. I would however advice that always be wary of the cleanliness of the karinderia. Should at any point if in doubt of the sanitary of the place, I would not recommend ordering Bopis . I have been posed several versions of Bopis , please do check out the following post. To Overseas Pinoys who are lovers of bopis and have for some time craving the dish but cannot cook one because the pork or beef internal organs for some reasons are not available in your locations, I would like to share a chicken version instead. Otherwise try my vegetarian version Vegeterian Bopis . Occasionally on some supermarkets here in Australia chicken innards are available, and I am sure it may be available elsewhere specialty where there is a large community of Asian or Filipino in particular. For the chicken innards ingredients of my version of Chicken Bopis , I used the hearth, gizzard and liver. Similar to my pork bopis recipes the chicken innards has to be parboiled before chopping to small cubes. Just remember that the gizzards will take longer to cook. Bopis with Pineapple . Most Pinoy knows what is bopis but majority would probably stay away with the dish. The traditional bopis is cooked with annatto or achuete , a natural red coloring ingredient used in Pinoy cooking . The reason for adding a bright red color to the dish is to make it more appealing. Check out the recipes from the archives of a regular bopis and a vegetarian version. Vegetarian Bopis Bopis, Kandingga For my innovative Bopis with Pineapple I did not use or minimise the use of any of the bright colored ingredients. On this version of bopis I demonstrated that a bopis without all the bright coloring ingredients could still look delicious. Annatto and carrots are omitted on this bopis recipe, I have to have the red bell pepper because it is not used solely for its color, but for their sweet peppery taste. Vegetarian Bopis . It’s been some time since the last time I cooked a vegetarian dish. Today I got a change to cook a special one. Incidentally one of today’s special at Woolworths Supermarket here in Australia is a vegetable soup pack which includes turnip, radish, carrot, potato, white onion and celery stalk which are all in the list of ingredients for a vegetarian bopis. All that I needed now for the other ingredients are bell pepper, mushroom and firm tofu, the rest I could find it in my cupboard. Here is the recipe of my version of  Vegetarian Bopis . Bopis or Kandingga in Bicol . I have several requests for this recipe, now here it is. Bopis is another popular turo-turo dish . It is made up of diced pork or beef lungs, spleen and heart . Cooking this dish is a little bit tricky, it has to be done right to rid of that pig innards smell. It has to be sautéed really dry or until it is sizzling. Or you could boil again the diced bopis and rinse, drain before cooking sautéing . For this reason some are not so keen to have this dish. But for those who have come to like the exotic taste of bopis is surely one dish to crave for. Here is my recipe.
