Braised Pork Spareribs with Pineapple



Making our Pork Spareribs with Pineapple is fairly easy, every one with basic knowledge on Pinoy Cooking can make it. First the pork spareribs were marinated with the Pineapple Syrup from the canned pineapple slices, vinegar, soy sauce, Hoisin sauce, oyster sauce sugar, crushed peppercorns, crushed garlic and bay leaf before braising or stewing.

For the actual pork spareribs I used back ribs cut into 2 inches wide strips. I also used pineapple slice. The intention was for better serving presentation. Of course you can use any randomly cut pork spareribs and pineapple chunks or titbits.

Ingredients:

1 1/2 kilo baby pork back spareribs cut into 2 inches wide strips
1 large can sliced pineapple, reserve syrup
2 tbsp. Hoisin Sauce
2 tbsp. oyster Sauce
1/2 cup vinegar
1/2 cup dark soy sauce
1/4 cup washed sugar
1 small bunch snow peas, trimmed
1 small carrot, skinned, cut in slices or strips
1 medium sized bell pepper, deseeded, cut into strips
1 small bunch, green beans, trimmed, cut in half diagonally
2-3 pieces star anise
1 tbsp. cracked peppercorns
1/2 head garlic, peeled, crushed
1 thumb size ginger, skinned cut into thin slices
salt
chopped leeks or spring onion, for garnishing
boiled eggs cut in quarters, for garnishing

Cooking Procedure:

Marinate the pork spareribs with the reserved pineapple syrup, Hoisin Sauce, Sauce, vinegar, soy sauce, washed sugar, few dash of salt, cracked peppercorns, sliced ginger, crushed garlic, star anise and bay leaf for at least 15 minutes before cooking.

In a medium sized sauce pan place all the marinated pork spareribs including the marinade. Add in about 3 to 4 cups of water, return lid, bring to a boil and simmer for 45 minutes to 1 hour. Now place the sliced pineapple on top and continue to cook for 20 to 25 minutes or until most of the liquid has evaporated and has turned into an oily sauce. Correct saltines and sweetness if required. Now add in the vegetable on top. Continue to cook for another 3 to 5 minutes. When done arrange the Pork spareribs in a big platter, garnish with the chopped spring onion and sliced boiled eggs. Serve with a lot of rice.
