Pork and Asparagus with Oyster Sauce Stirfry

Today I would like to share another variety of a Pinoy style stir fry dish, Pork and Asparagus with Oyster Sauce. It is made up of pork loin and some asparagus stir fried with oyster sauce. Using oyster sauce in stir-fry dishes is a never go wrong ingredient. It is savory and sweet which has become one of the most used ingredients in Pinoy Cooking. We have been using oyster sauce in a lot of our stir-fry, braised and even in our pansit and adobo recipes.

Here is the recipe of our stir-fry dish for today, Pork and Asparagus with Oyster Sauce. Try it.

Ingredients:

1 medium size pork loin, about 1/2 kilo, cut into thin strips
2 bundles asparagus, trimmed, cut into 2”lengths
1 small size red bell pepper, deseeded, cut into strips
2-3 cloves garlic, peeled, crushed, chopped
2 thumb size ginger, skinned, cut into thin strips
1 tsp. crushed peppercorns
1/2 cup oyster sauce
1/4 cup corn starch
1/4 cup soy sauce
salt
cooking oil

Cooking procedure:

Marinate the pork with soy sauce, crushed peppercorns and cornstarch for at least 10 to 25 minutes. Keep aside. In a wok heat generous amount of cooking oil until it start to smoke. Stir cook the asparagus for 2 to 3 minutes or until half cooked. Remove from wok and keep aside. Using the same wok, add more oil as necessary stir cook the garlic and the ginger until fragrant. Stir in the pork and stir cook for 2 to 3 minutes. Add in the soy sauce, oyster sauce and about 1/2 cup of water continue to stir cook for 2 to 3 minutes. Correct saltines if required. Add in the asparagus and bell pepper, stir cook for another 1 to 2 minutes. Serve with rice.

  2. Hi Barry, cornstarch is part of the marination, while the oyster sauce is to be added on the final stage of cooking, thank you for your comment, and support. The instruction is now rectified.
