CHICKEN MENUDO KARINDERIA STYLE │ How to Make Chicken Menudo

Try this Chicken Menudo, Carinderia Style, it is a No Pork Menudo version of the popular Pork Menudo usually sold on street corner karenderia(s).

Of course it is loaded with a lot of potato, carrots and chicken hotdog.
And the not so secret ingredient banana ketchup.

Ingredients:

1/2 kilo chicken breast or thigh, cut into small cubes
1/4 kilo chicken liver, cut into small cubes
4-6 chicken hotdogs, cut into small rings
2 medium size potatoes, cut into cubes
1 medium size carrot, cut into cubes
1 medium size, red bell pepper, cut into small squares
1/2 head garlic, chopped
2 medium size onions, chopped
2 medium size tomatoes, chopped
1/4 cup fish sauce
1/3 cup soy sauce
1/3 cup oyster sauce
1 small pack tomato sauce, Pinoy style
1/2 cup banana ketchup
1-2 tsp. powdered black peppercorns
1-2 tsp. paprika
1-2 bay leaves
salt to taste
cooking oil
spring onions for garnish
red and green chilies optional
