NILAGANG PORK PATA with KALABASA para itong LINAT-AN ng BISAYA
Nilagang Pata ng Baboy, Linat-an Bisaya style.
With Kalabasa, Corn, Cabbage and Pechay.
I used pork leg but Nilat-an is also best with pork ribs, pork belly or pork buto-buto.
1 kilo chopped pork pata
1 small slice kalabasa, sliced into wedge
2-3 medium size potato, cut into wedges
2 yellow corn, trimmed, cut crosswise to 4 sections
1/2 medium size cabbage, cut into wedges
1 small bunch pechay, trimmed
1/2 medium size napa cabbage, trimmed, cut in half
1-2 lemongrass, crushed, tie into a knot
3-4 pieces green long chilies, optional
2-3 medium size onions, quartered
3-5 bulb garlic, crushed
1 tbsp. whole or cracked black peppercorns
1/2 cup fish sauce
salt to taste
