Paano Gumawa ng Chicken Tocino (Tosino), No Pineapple Juice Recipe.

Subukan itong naiibang Easy Homemade  Chicken Tocino  recipe.

Used deboned Chicken Leg Quarters.

I deboned the chicken legs, the exposed meat will easily absorbed the curing mixture.

The deboned chicken will cook faster, I used plate grill and pan grill instead of charcoal grill.

I made it simple, just throw in all together the curing mixture or ingredients to the chicken.

Because of that, the chicken with the curing ingredients has to be massage a little longer, and cured for several days, for the meat to absorb the curing mixture.

Massage, do not squeeze, for about or a total of 8 to 10 minutes, or until most of the liquid is absolved by the meat.

It is important that the chicken should be chilled when mixing with the curing ingredient.

Refrigerate, place in a chiller, to cure for 2 to 3 days, at this period the meat will absorbed all the curing mixture.

I used refined white sugar, the meat absorbed the refined sugar easier, there will also be less burnt sugar when cooking, compared to brown sugar with impurities.

You can use table salt, but refrain from using iodized salt, better use rock sea salt.

I did not use pineapple juice, just wondering why all the tocino recipe videos now are mostly have identical ingredients using pineapple juice as one of the main ingredients.

Instead I used some kalamansi as an alternate for the acid and vitamin C ingredients.

I also used pink curing salt, tocino are best when cured for several days before cooking.

Tocino will not taste tocino if it is not cured for several days.
Of course pink salt may be omitted, especially if you plant to cook the tocino after marinating overnight.

If you have used warm water to extract the annatto water from the annatto seeds, chill the annatto water  before using.

1 kilo, 4 to 5 pieces chicken leg quarters
1/2 cup refined white sugar
1 - 1 1/2 tbsp. ground salt
1 tbsp. powdered black peppercorns
1/2 - 1 tsp. curing pink salt
1/2 cup annatto water from 1/3 to 1/2 cup annatto seeds
1/2 - 1 head garlic, minced 
cooking oil
choice of dipping sauce
