Ingredients:

2 medium size bitter gourd, split in halves de-seeded, sliced crosswise
2 cups pork, boiled, cut into thick strips
12 pieces medium size prawns, shelled
3-4 clove garlic, peeled, crushed, chopped
1 small size onion, peeled, chopped
1 tsp ground peppercorns
1/4 cup dark soy sauce
1-1 1/2 cups oyster sauce
1/4 cup cornstarch
salt
cooking oil

Cooking procedure:

In a wok sauté garlic and onion until fragrant. Add in the pork and prawns and stir cook for 2 to 3 minutes. Now add in the ground peppercorns, soy sauce, oyster sauce and about 1/2 to 1 cup of broth in boiling the pork or water, bring to a boil and simmer for 2 to 3 minutes. Add the in the bitter gourd and continue to cook another 5 to 8 minutes or until the bitter gourd is just cooked. Thicken sauce with the cornstarch diluted in 1/4 cup of water, cook for another half a minute until sauce thickens. Correct saltines if required. Serve hot with a lot of rice.
