Sweet and Sour Swordfish Steak. I had some slices of malasugi, swordfish steak that have been lying in the ref for some time now. It was not cooked immediately for the reason that I could not decide how to cook the swordfish steaks. I usually like malasugi cook asTinowa a Visayan soup of boiled fish in lemongrass. The truth is I have already made tinowa half of the fish.  I just can’t resist buying the malasugi steaks for tinowa every time I see it at the supermarket.

Ok I decided to cook the SwordfishSteaks Sweetand Sour style.  My Sweet and Sour Swordfish Steak is cooked using just the Pinoy tomato sauce in sachet. It is simple easy and of course quick.

Sweet and Sour Swordfish

Here is the recipe of my Sweet and Sour Swordfish Steak, you can also try it using other slice fish.

Ingredients:

1-2 kilos sword fish, malasugi
3-4 cloves garlic, peeled, crushed, chopped
1 medium size onion, peeled, sliced
2 thumb sized ginger, skinned, cut into thin strips
1 medium size tomato, trimmed, cut into wedges
1/2 small size carrot, skinned, cut into strips
1small size red/green bell pepper, trimmed, de-seeded cut into strips
1 small packet tomato sauce
2-3 tablespoon brown sugar
salt
cooking oil

Cooking procedure:

Frying the fish: Season the fish steak with salt. In a wok heat generous amount of oil until it start to smoke. Fry the fish steak in batches for about 2 to 3 minutes each side or until golden brown, do not over fry. When done remove from wok and drain excess oil on kitchen papers.

Making the sauce: Using the same wok discard the excess cooking oil. Stir fry the carrot, the bell pepper, the onion, the tomato, the chili and the spring onion for about 1 to 2 minutes. Remove from wok and keep aside. Now stir fry the ginger and garlic until light brown. Add in about 1/2 to 1 cup of water and bring to a boil. Add in the tomato sauce and sugar. Simmer for 2 to 3 minutes. Then add in the stir-fried vegetables. Continue to cook for another 1 to 2 minutes. Season with salt to taste, correct sweetness if required.

To serve: Arrange the fried fish steak in a platter. Pour over the sweet and sour sauce. Serve immediately.
