Pork and Chicken Afritada in Banana Ketchup with Kamote Afritadang Manok at Baboy sa Banana Ketchup na may Kamote pa. Ingredients: 1/2 kilo pork, cut to pieces 1/2 kilo chicken, cut to pieces 1-2 medium size sweet potatoes, sliced or cut into wedges 1 medium size potato, sliced or cut into wedges 1 medium size carrot, sliced or cut into wedges 1/2 head garlic, chopped 2-3 medium size onions, chopped 3-4 medium size tomatoes, chopped 1-2 tbsp. crushed black peppercorns 1-2 tbsp. paprika 2-3 bay leaves. 1/3 cup soy sauce. 1/3 cup fish sauce. 1/2 cup banana ketchup. 1/2 cup annatto water from 1/3 cup annatto seeds 2 sliced bread, soak in 1 cup water, mashed red bell pepper or red hot chili peppers salt to taste sugar to taste cooking oil.

Afritadang Baboy at Manok with Kamatis at Skyflakes Today I would like to share my version afritada using pork and chicken combination.  This afritada recipe is based on Pork and Chicken Afritada recipe first published on Overseas Pinoy Cooking website. For this afritada version I used fresh seared/fry tomatoes instead of the canned crushed tomatoes. I also used Skyflakes crackers for thickening of the sauce instead of sliced bread. I also added some cooked green peas for added texture and color. Cheesy Pork and Chicken Afritada is our Christma s version of our Afritada .  I have not only added cheese to our already yummy Pork and Chicken Afritada , I have also added some vegetables to make it complete dish and also make it more appealing in contrast to the usual faritada with our greens. Cooking is of course similarly the same with our already deliciously proven Afritada dishes . Prawn Afritada, Afritadang Sugpo . I myself love afritada , who would not? Afritada is just like kaldereta in terms of cooking versions, there are countless cooking method out there. Everyone’s version are different, each versions will depend on availability of ingredients and family’s cooking method. As a general rule just remember that recipes are just guides, it is not necessarily that every steps and ingredients have to be duplicated, go ahead if you want to try to cook afritada , it is not that hard. Pork and Liver Afritada . At first I was hesitant to make this dish, adding liver to Afritada recipe does not make sense, the dish will now be similar to Kaldereta dish . Never the less due to some request to try cooking Pork and Liver Afritada , I’ll give it a try. In fact it would be safe to say that it is more acceptable to a non-Filipino because it is milder in taste compared to the tangy adobo and spicy kaldereta. Often times it is usually one of the food choice of some airline on-board meals that fly to Manila . Pork Afritada is another Pinoy dish that is tomato sauce based meat, and some versions also uses fish, see my post on afritadang bangus , stew. Usually afritada is best with chicken meat, see my post on chicken afritada , but pork and beef meats are also suitable. Afritada is also one of the fiesta dishes that are cooked on special celebrations. It is as popular with other Spanish origin Pinoy dishes like menudo , kaldereta and mechado ,  which are all tomato based stew but have their own flavors and distinctiveness. Afritadang Bangus, Milkfish Afritada . Here is an alternative way of cooking bangus if you are tired of your regular daing, paksiw or sinigang na bangus . The bangus I used on this recipe is frozen that are sold at supermarkets. The freshness compared those that are sold at wet market here they are equally good and at times better, it must have been frozen right after it they were caught. As mentioned on my previous post of paksiw na bangus there are countless ways to cook bangus and afritada is one way. Chicken Afritada . It caught my attention the fresh chickens on the rack, when I fast by Al Maya Supermarket earlier this evening. Then I thought why not cook a chicken dish tonight, it’s a little late already and wanted a good dish. Although fresh chickens are more expensive than frozen, the extra cost is compensated by the time save to de-freeze especially when you’re already really hungry after a day of hard work. Fresh chickens come from the local poultry in the cooler part of UAE at Al Ain.
