Adobong Kangkong with Oyster Sauce. To today I am sharing my version of Adobong Kangkong . Adobong kangkong is one of the more popular vegetable adobo. It is simple, quick and fairly easy to prepare. Adobong kangkong is not new, in fact it is one of my first dish when I have started this Pinoy Food Blog . I have been posting also other Vegetable adobo recipe regularly. Adobong Kangkong . Kangkong is a versatile vegetable on its own. It is usually of of the vegetable ingredients of sinigang and pinakbet , Kangkong is also  cooked with bagoong alamang , ensalada , crispy fried, atsara ect. and of course Adobong Kangkong . When I was working in Singapore, kangkong was a regular dish, it is one of the popular dish at hawker centers . In fact I love how they cooked it is called "kangkung sambal" it's stir fried with samba l ( Sambal is a sauce paste made up of chilies, garlic, tomatoes, shrimp paste, etc.). Compared to Adobong Kangkong, it is extremely hot and spicy. Kangkong is usually served as side dish for fried or grilled dish. Clams with Kangkong in Chili and Black Bean Sauce . Once again I would like to share another original OPC recipe . Halaan and kangkong combination are always popular in Pinoy cuisine . Pnoys alsways cooked halaan with kankong most of the time. Today I am sharing a new cooking method of halaan and kangkong aside from  tinolang halaaan .  Clams with Kangkong in Chili and Black Bean Sauce  is a  seafood shells  and  vegetables quick stir fried dish . For the sauce I just used a regular sweet chili sauce and tausi that are regular ingredients in  Pinoy cooking . Cooking is fairly simple, the secret is timing on adding the  kangkong stalks  and leaves at different times as the clams are being stir cooked to avoid over cooking the  seafood . Ginataang Halaan with Kangkong . Ginattang halaan is not new to OPC , we have a couple of versions of ginataang halaan with malungay , click the link below should you want to check out the post on the archives. Ginataang Halaan Ginataang Halaan with Malungay at Bulaklak ng Kalabasa Today I want to share the recipe of another ginataang halaan using kangkong for the vegetable ingredient. Cooking is basically the same, except that the stalks of kangkong should be separated from the leaves. Kangkong stalks require longer cooking time than the leaves and should be added at earlier stage of cooking. Here is the recipe of my Ginataang Halaan with Kangkong, enjoy. Ukoy na Dilis at Kangkong

Ukoy na Dilis at Kangkong is a tweaked version of my Ukoy na Dilis recipe. On this tweaked version I fried the dilis in a bed of kangkong leaves. The basic recipe is similar except for the addition of the kangkong leaves. To assemble lay several kangkong leaves in a small sauce plate this will serve as a bed for the dilis mixed with the prepared batter. The ukoy mixture is then slide in to hot oil for deep frying. The dish is best served with vinegar, garlic, salt and hot chili dip. Here is the recipe of my innovative Ukoy na dilis at Kangkong enjoy. Ingredients: 1/2 kilo dilis, anchovy, head abd entrails disgarded 2-3 stalks spring onion, chopped 1 big bundle kangkong, trimmed 1/2 cup flour 1 1/2 cup cornstarch 1 tsp. baking powder 1 medium size egg, beaten salt and pepper cooking oil Cooking procedure: In a bowl mix flour and cornstarch, dash of salt and pepper. Ensaladang Kangkong . Ensaladang Talbos is one of the top seller at Kanin Club, an upscale Filipino Food Restaurant in Manila. Their version is made up of blanch kamote tops served in a bed of sliced white onion, chopped tomato and with bagoong vinegar dip. Today I would like to share a kangkong version of the dish. Instead of using kamote tops I used kangkong which is readily available even overseas. To make the dish the leaves and stems of the kangkong has to be separated for the obvious reason that the stems will cook longer. The dish can be serve tossed with chopped tomato, onions and bagoong na isda vinegar mixture. Ginataang Kuhol with Kangkong . I usually buy kuhol from South Supermarket at Filinvest Alabang whenever I am craving for Ginataang Kuhol, one thing for sure the kuhol sold at this supermarket are clean compared to the ones sold at wet markets. The snails are continuously soaked with fresh water and the snails would have expelled most of their excrement and spit out most of the dirt and grimes trapped on their shells. However to really make sure that the snails are clean I still have them soaked with water most of the day before cooking them for dinner. As I have previously mentioned on my first post of  Ginataang Kuhol  the snails require a thorough cleaning which includes brushing the shells and checking the snail guts as the shell tip are being chopped off, smelly snail indicate that it is dead and should be discarded, if possible the exposed intestines should also be removed, then the snails are finally washed with running water. Tinolang Tahong at Pechay, Green Mussels with Bok Choy . Back home we would prefer our tinolang tahong with kangkong. But when in overseas kangkong will likely be not available in most part of the world. Down here in Australia kangkong is only available in some key cities with significant number of Asian communities . I am presently located in some remote mining town here in Australia therefore I had to innovate or find an alternative to kangkong . Luckily bok choy is for some reason is one of the more common Asian vegetables here, which is as good as kangkong for my tinolang tahong . Frozen green mussels from New Zealand are readily available in most supermarkets here.
