Adobong Sitaw is one of my all time favorite. I have already made a post of the all vegetable version of the dish. Click here to see that post. Again I am posting a version with pork combination. Most of the readers have probably know how to cook the dish.

But for the benefit of those who are learning to cook I am posting this recipe. It is strait forward there are no special method or secret it is just a stir cook and stew method. With a lot of pork added you could not go wrong.

Adobong Sitaw at Baboy

Just be careful not add vinegar more than what is recommended. Should pork is not available chicken or beef can also be used instead. Enjoy…

Ingredients:

3 bundles sitaw, cut into 2” length
1/4 kilo pork liempo, pork belly, cut into cubed
1/2 head garlic, crushed
1 medium size onion, chopped
1/4 cup soy sauce
1/4 cup vinegar
1/4 tsp. pepper
cooking oil
salt

Cooking procedure:

In a wok, put pork and add 1 cup of water bring to a boil and simmer for 10 to 15 minutes or until pork are tender and all the liquid has evaporated and start to render fat. Add more water as necessary. Shift pork at one side and stir-fry garlic until it start to turn to golden brown, add onion and continue to stir fry until translucent. Pour 1 cup of water and add in pepper, soy sauce and vinegar. Bring to boil and simmer for 5 to 8 minutes with out stirring. Add in sitaw and simmer for another 10 to 15 minutes or until sitaw is cooked but firm. Season with salt if required. Serve hot with a lot of rice.

  1. This is a sitaw recipe that I never developed the liking for...I only like sitaw with ginataang alimango.

    I do like the snap beans/green beans (or what we refer to as baguio beans in the Philippines) for this recipe instead of sitaw.

  5. How to cook alimango with sitaw? ...can we add monggo beans with coconut milk on it?
