Pancit Lucban, Pansit Hab-hab Recipe
Pancit Lucban, Pansit Hab-Hab is a pancit miki guisado version of Lukban, Quezon. This local delicacy of Lucban is sautéed miki noodles with pork meat, pork liver and shrimp. Pechay and sayote is a must vegetable ingredient. What makes this dish unique is the way it is eaten.

Pancit Lucban, Pansit Hab-hab Dish

It is placed in a banana leaf and eaten strait to your mouth with out using any utensil. Pansit hab-hab is drizzled with vinegar to enhance its taste.

Here is the recipe of my Pancit Lucban, Pansit Hab-Hab, try it.

Ingredients:


Lukban Miki Noodles

150 g. pork, boiled, cut into strips
150 g. pork liver, boiled, cut into strips
200 g. medium size shrimp, shelled
1/2 k. Lucban miki noodles
1 medium size carrot, sliced
3 big bundles pechay, cut crosswise
200 g. sitsaro, stringed
1 medium size sayote, sliced
1/2 head garlic, minced
1 medium size onion, chopped
1/2 cup patis
1/4 cup soy sauce
1/2 tsp. black pepper
cooking oil
vinegar or kalamansi juice

Cooking procedure:


Pancit Lucban, Pansit Hab-hab - Cooking Procedure

In a large wok, sauté onion and garlic. Add pork and shrimp stir for 2 to 3 minutes or until meat start to sizzle, Add soy sauce, patis and black pepper and stir cook for 2 to 3 minutes. Add 6 to 8 cups of broth from boiling of pork and shrimp shells and heads, let boil and simmer for 5 to 10 minutes. Add in miki noodles stir and cook for 5 to 10 minutes or until noodles are soft and have absorb most of the broth add more stock if necessary. Add all the vegetables stir and cook for another 3 to 5 minutes or until vegetables are just cooked. Serve with vinegar or kalamansi.

i dont think pansit habhab is a miki version of all noodles.. pansit lukban is pansit lukban by itself no comparison.. at tsaka pag niluluto po eto wala halos sahug sayote lang and hipon...

I agree with you that pansit Lucban or pansit habhab is truly a pansit in its own, however the comparison is the closest description for most readers who have not heard or tasted understand and of course Lucban noodles is a type of miki noodles. The sahug I believe is for economic reason. The habhab noodles sold at streets of course used minimal ingredients for obvious reasons but noodles meant for love ones or for especial occasions are cooked it with extra ingredients to even adding chopped crispy fried pork toppings.

meron na po mabibili nito sa supermarket kaya lang doble na presyo compared sa lucban. nung sabado may 15,2019 we were at pahiyas festival, nakabili po kami at42php/ kilo pack. Dto sa manila 80 to 100 yata po ang ganun.

meron na po mabibili nito sa supermarket kaya lang doble na presyo compared sa lucban. nung sabado may 15,2019 we were at pahiyas festival, nakabili po kami at42php/ kilo pack. Dto sa manila 80 to 100 yata po ang ganun.

2019? cool =)... miss ko na pansit lucban. kahit ano naman luto ng pansit lucban basta lasang pansit lucban.... i remember yan ang ulam ko pag namamahaw ako...

Yes pansit lucban dried noodles are available in most metro manila supermarke.

here me in davao, nag papa LBC pa ko dito nung miki, tagal na kasi di maka uwe ng Lucban... musta sa mga lucbanin, SLPC2002.
